Grilled king prawns (or scampi) with Fini Traditional Balsamic Vinegar of Modena

To its great merit, this dish beautifully retains the flavor of the shellfish. Since it is so quick to prepare (15 minutes), the flavor of the seafood is not lost, while the Fini Traditional Balsamic Vinegar of Modena mellow the salty sharpness.

Ingredients:
1 kg king prawns scampi
6 tablespoons of Fini extra virgin olive oil
2 tablespoons of Fini Traditional Balsamic Vinegar of Modena (12 years old or 25 years old)
salt and pepper to taste

Lightly oil a large non-stick pan and heat until very hot. Arrange the previously washed and dried prawns or scampi in the pan. Allow grilling for 8 minutes without turning, occasionally moving them around the pan.
Season generously with salt and pepper. Then, turn the prawn over, brush with some more Fini Extra Virgin Olive Oil, add more salt and pepper and grill for a further 7 minutes (remember that scampi should be grilled for 10 minutes each side). Remove the pan from the heat, pour a tablespoon of Fini Traditional Balsamic Vinegar of Modena over the prawn and allow it to evaporate. Meanwhile, whip the remaining Fini extra virgin olive oil and Fini Traditional Balsamic Vinegar of Modena together in a cup to obtain a creamy sauce. Arrange the prawns or scampi on hot serving dish and pour the Balsamic Vinegar and olive oil mixture over them. Allow standing for two minutes and serving on individual plates with a little sauce from the serving dish poured on top.
