Omelet with FINI Balsamic Vinegar of Modena

4 eggs
½ onion
Cherry tomatoes
Salt, Pepper and Thyme
4-6 tablespoon of 2 leaves quality Fini Balsamic Vinegar of Modena
Enough FINI D.O.P. Umbria “Colli Assisi e Spoleto” Extra Virgin Olive Oil

Sauté with Fini Extra Virgin Olive Oil the onion (thin sliced) until it begins to turn brown. Add the cherry tomatoes (now cut in half) and the 2 leaves quality Fini Balsamic Vinegar of Modena and continue to cook (high flame) until achieving a “reduction” of Balsamic Vinegar of Modena, tomatoes and onions.
Add the beaten eggs. When you can see – from the outer edge – that the omelet is cooked, turn over.Add thyme, salt and pepper and a drop of Extra Virgin Olive Oil. Garnish with chives.
