FINI adheres to the strict classification system set by AIB (Italian Balsamic Vinegar Tasting Association) in order to guarantee the undisputed quality of this product.
AIB set a system for the sensory analysis of Balsamic Vinegar of Modena, which evaluates the sensory descriptors, and gives a measurable quality level as a result. The system divides Balsamic Vinegar of Modena in four different quality categories, which are indicated by a symbol on labels.

AIBThe Association's intention is to promote the characteristics of Balsamic Vinegar, to incrise the product and protect the consumer.
